Tequila Lime chicken
Ingredients:
- 2.5-3lbs boneless skinless chicken thighs
- 1/4 cup olive oil
- 1/4 cup silver tequila
- 1/4 cup lime juice + the zest (about 4 limes)
- 1/4 cup fresh squeezed orange juice
- 3 cloves garlic, minced
- 1 tbsp chili powder,
- 1 tsp cumin
- 1 tbsp salt
- 1.5 tsp pepper
- 1/4 cup chopped cilantro
A few notes on making this:
- When summer hits and you’re looking for something to grill, this always hits the spot. The chicken cooks quickly and the marinade gives great flavor.
- Reduce the marinade for extra sauce, if desired.
- Use an an automatic juicer to quickly juice your citrus
Directions:
- Combine all marinade ingredients in a bowl or a large ziploc bag
- Add the chicken, ensuring it is fully submerged.
- Refrigerate for at least 1 hour, but ideally 3 to 24 hours for the deepest flavor.
- Remove chicken from the marinade and shake off excess.
- Cook over medium-high heat on a grill or in grill pan for about 5–7 minutes per side, until the internal temperature reaches 165°F.
- Remove to a plate to rest before serving.
- Reduce the marinade in a saucepan on high heat while the chicken cooks for extra sauce to serve.
- Garnish with freshly chopped cilantro, if desired.
